Spicy Shrimp and Beans

Adrenal Reset Diet Spicy Shrimp and Beans

Is shrimp good for you? Short answer is yes, if you choose the right types.  Wild caught shrimp is packed with many different nutrients like tryptophan, B-12, selenium, astaxanthin, omega 3 fats, and zinc. Shrimp is great for preventing brain aging and also exceptional for bone health. This recipe taste great and light enough to have for lunch or dinner. Enjoy!

Ingredients:

  • 2 tablespoons olive oil
  • 1 pint cherry tomatoes (about 2 cups), halved
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup apple cider vinegar
  • 2 (15-ounce) BPA-free cans white beans, drained and rinsed
  • Kosher salt
  • 1 pound uncooked peeled and deveined medium wild caught shrimp
  • 1/4 cup coarsely chopped fresh parsley leaves
  • Cooked long grain jasmine brown rice

Directions: 

  1. Heat the oil in a large skillet on medium-low heat.
  2. Add the tomatoes and cook about 2 minutes. Add the red pepper flakes and cook until fragrant, about 1 minute more.
  3. Pour in the apple cider vinegar and simmer for one minute.
  4. Mix in the beans and turn down. and season the mixture with salt as needed.
  5. Add in the shrimp and gently toss to combine.
  6. Cover and cook until the shrimp are cooked all the way through which should be under 5 minutes.
  7. Sprinkle with the parsley and serve immediately on top of rice.
  8. Enjoy!
