Tired of salads with lettuce? Want something zesty and full of fresh flavor? Try this!
When we had our foreign exchange student from the Middle East, she asked why we only had dry salads and never ate “wet” salads. When we asked her what she meant, she said back home, salads don’t use much lettuce. Her mom uses “wet” veggies like tomatoes and cucumbers and combines it with liquids like lemon juice and olive oil. This inspired me to create salads that taste fresher and yes, zestier than traditional American salads. I hope you enjoy this as much as my family does.
Makes 3 LUNCH servings
Chickpeas (are your “good carb”), Olive oil and avocado are your good fats, + add a side of protein (I used chicken), or skip the chicken and have this for a delicious vegan lunch, and you’re good to go!
- 3 cucumbers chopped
- 2 peppers chopped (I used red and orange)
- 1 large – or ½ pint of cherry tomatoes
- ½ avocado cut into chunks
- 1/4 onion (optional)
- Cilantro finely chopped (optional)
- 1 can chickpeas or garbanzo beans (rinsed and drained)
- 1 whole lemon squeezed
- OR 1 ½ limes squeezed
- 2 tbsp olive oil
- Salt & pepper to taste
If you are following the Adrenal Reset Diet, ½ cup of chickpeas or garbanzo beans is your lunch serving OR ¾ cup for a dinner serving.
