Here is a great tasting fiber powerhouse you probably overlook in the supermarket.
Tomatillos, also known as Physalis philadelphica, look like baby tomatoes but they are not. Believe it or not, they have some of the same healing alkaloids as the Ayurvedic herb Ashwagandha.
Due to their nutrient content, tomatillos can cut risks of diabetes, help weight loss. Studies have shown they can also lower risks of cancers including lung and colorectal cancers.
They have a unique citrus/tomato type flavor that works well in many dishes.
One source of them is in the popular Mexican condiment salsa verde which I like, but often it is saltier than I’d prefer. Once you get the hang of husking and splitting them, they are so easy to cook with. It is great to get to know them on their own and add them to most any seafood or poultry dish.
Please enjoy this recipe. If you like it spicy like I do, you can also add 1/2 – 2 habaneros peppers, seeded and diced.. If you don’t like it spicy, definitely bypass the habaneros.
