Here’s how I make my favorite sauce. These guidelines will not only enhance the flavor but will maximize the bioavailability of the numerous nutrients and phytochemicals found in tomatoes.
First get some organic mini plum-shaped tomatoes – at least 4 pounds. Store them at room temperature for a week. Believe it or not, this will cause the plants to taste better and make more lycopene.
Give the tomatoes a good rinse and let them dry for a few minutes.
Take a heavy deep cast iron skillet and add a splash of high quality extra virgin olive oil. Heat the pan until the oil is hot, drop in the tomatoes. Reduce the heat to a low simmer. Stir occasionally and simmer for 90 minutes.
You can jazz it up with garlic, onions, basil, balsamic vinegar, anchovies, or other things. I love it with just the tomatoes. The prolonged cooking and the olive oil help you absorb lycopene and the carotenoids more effectively.
Here’s a cool trick – serve that up on some spaghetti squash and you’ve got an unlimited food. Great with a meal or something you can have anytime as snack and still stay within the adrenal reset diet guidelines
